We launched our first Taste of Palestine tours with Zaytoun in 2016 to introduce a wider group of people to Palestine — and ended up falling in love with the food.

We’ve long believed that the best way to understand Palestinian culture is around the kitchen table. Whether that’s sharing a meal in a rebuilt home in Al Walajah, laughing with friends over dinner in Bethlehem, or cooking with Sally Azzam in Bristol and Phoebe Rison from the Olive Tree Kitchen on stage at Greenbelt Festival — food has always been where connection begins.

While our tours aren’t currently running, we remain committed to continuing this work around food and culture in the West Bank as soon as we’re able. Despite the ongoing challenges facing Palestinian communities — increased restrictions, settlement expansion and violence — the power of Palestinian food to build solidarity and tell stories of resilience continues.


Fadi Kattan

We first met Fadi Kattan through the Syrian Guesthouse in Bethlehem and his outstanding Fawda Restaurant. We’re deeply grateful for the support he’s given through his restaurant Akub, his celebrated Palestinian restaurant in London.

When Sami Tamimi launched his cookbook ‘Falastin’ with Tara Wigley during lockdown, it quickly became a firm favourite. The launch inspired the first in a series of mouthwatering online food events. Who knew that was even possible?

Sami Tamimi and Yotam Ottolenghi have hosted four wonderful fundraising dinners for Amos Trust. And Souk al Salam, the food market Sami set up to support our Gaza Emergency Appeal, proved so popular it had to turn people away.
