Sally Azzam (pictured above), Palestinian chef and Amos team member, will lead a hands-on labneh workshop. Labneh is a creamy, tangy strained yoghurt, traditionally shaped into small balls and preserved in olive oil. Across the Levant, labneh has been made and preserved this way for generations, long before refrigeration was widely available.
Sally will share the history of labneh and its place in Palestinian and Levantine kitchens. She’ll demonstrate how to dry and roll the labneh into balls, coat them in herbs, spices and edible flowers, and preserve them in olive oil. You’ll make your own jar of labneh balls to take home.
Community supper
Afterwards we’ll sit down together for a Palestinian-inspired supper made with seasonal veg from POM’s market garden. Mark and Bina from POM will talk about their Palestinian seed-saving project and show some of the seeds they’ve grown and saved. These seeds carry a living heritage that’s been passed from hand to hand.
Palestinian wine will be available to buy with your meal, and you can browse other Palestinian produce in POM’s deli.
It’ll be an initmate and relaxed evening for conversation and solidarity, and a chance to find out more about Palestinian culture and Amos Trust’s work in Palestine. Every penny raised will support our partners in Gaza and the West Bank.
Please note that the meal is vegetarian.
